The Sicilian viticulture is unique in the world: diversified territories on the slopes of the mountains or near the sea, with vineyards located either few meters from the shoreline or at the bottom of a volcano.

Thanks to the accurate selection of Grillo, made by organically grown grapes, we obtain this Gergenti Organic Grillo.

Light straw yellow colour, fruity with a finish of Sicilian citrus. In the mouth is clean, soft with a good level of acidity. The grapes are handpicking in the second week of August. After the harvest they are gentle pressed and slow fermentation takes place at controlled temperature of 15° C for about 15/20 days. After a short period in tank the wine is aged in bottle for 3 months.

Excellent with pasta, fish and grilled and stew vegetable. Perfect as aperitif or simply by its own.

Grillo

Grown soley in Siciliy, Grillo is a grape which is well placed to withstand high temperatures whilst still making dry, fresh white wines.

Until the 1960s it was used exclusively for Marsala, it then fell into decline until is was resurrected by Marco de Bartoli in the 1990s. Think of it as a fuller, fruitier alternative to Pinot Grigio.
