Ananto Organic Macabeo 2025 is a fresh, expressive white from Bodega Sierra Norte in Utiel-Requena. Made from 100% organically grown Macabeo, it demonstrates just how much character this often-overlooked grape can offer when grown at altitude and handled with care.
Delicate aromas of white flowers and lemon citrus lead into flavours of crisp apple, subtle white spice and fresh orchard fruit. Bright acidity keeps the palate lively, while the finish is clean, balanced and refreshing.
The vineyards lie in the north-west of Utiel-Requena at around 900 metres above sea level, where warm Mediterranean sunshine is tempered by cooler nights. Organic farming, including natural fertilisers, cover crops and biological pest control, helps maintain healthy soils and encourages the vines to express their site.
After harvesting, the grapes are cooled before a short cold maceration to extract delicate aromas. Fermentation then takes place in temperature-controlled stainless steel tanks, preserving the freshness and purity that define the wine.
Macabeo is best known as one of the traditional grapes of Cava, but in still wines like this it offers subtle aromatics, bright fruit and an easy-going style that makes it an excellent everyday white.
Food Pairing
Serve chilled with grilled fish, seafood, pasta, roast chicken or light salads. Its crisp acidity also makes it an excellent aperitif.

Macabeo/Viura
Macabeo, often called Viura, is planted throughout Spain (it is very popular in Rioja) and there are some small plantings in Southern France.
Expect to find aromas of white fruit coupled with floral and sometimes aniseed notes. Macabeo/Viura wines tend to be fresh with good acidity and combine well with seafood, vegetable dishes or cheeses.
Valencia divides into three geographically
separate growing areas.
The vineyards near the coast have a Mediterranean climate,
whereas those situated further inland have a continental climate. The hot summers and cold winters provide growers
with many challenges, not to mention the threat of violent storms in
late summer and autumn.
The 67 hectare Finca Fuenteseca estate lies in Utiel Requena, a high, rugged plateau, nearly 1,000 metres above sea level just inland from Valencia. The combination of hot, dry summers, cold nights and poor, limestone soil make the area relatively free of vine diseases and so ideal for organic farming. The entire estate is now dedicated to organic production and producing blends combining indigenous and international varieties.
