Domaine du Prieuré

Based in the heart of the Cote de Beaune, the picturesque village of Savigny-les-Beaune has for a long time earned its reputation as a place to find excellent wine. It was here that the monks of Citeaux, the founders of the Burgundian vineyard system, became substantial property owners. In order to administer their vineyards they established a priory in the 16th century, hence the name.

The domaine is owned by Jean-Michel Maurice, the mayor of Savigny, along with his son Stephen, who uses his international experience as winemaker to craft beautiful wines.

Stephen Maurice, Domaine du Prieuré

Stephen is the fourth generation of the Maurice family to make wine. Auguste, his great-grandfather, was working for other winemakers at the turn of the twentieth century when he planted a few vines in Savigny. Henry, born in 1921, bought a few plots and expanded the vineyards to 4 ha. Jean-Michel, born in 1955, bought more land in Hautes Côtes de Beaune. Stephen continues the family legacy.

At Domaine du Prieuré the vines are treated like family, what better way to check their health than to stay close to them through each growing season.

The planting density is 11,000 plants per hectare. Competition between vines contributes to low yields and forces them to go deep into the soil for the nutrition and water they need.

They do not use any herbicides and the cultivation methods improve the structure and microbiotic life of the soils. The treatments used and the doses of products applied are adapted to the disease pressure and the plant's growth cycle.

After pruning, the preparation work (disbudding and trellising) is done by hand. Carefully trellising the branches by hand allows the grapes to be properly distributed with good exposure to the sun for optimal ripening. The grapes are harvested when they are perfectly ripe. Each plot is monitored and the harvest date is based on ripeness, health and the weather forecast.
