Are you ready for something wild? Vin Jaune from the Jura in eastern France is unlike almost any other wine. Made from the Savagnin grape and aged under a natural layer of yeast for more than six years, it slowly develops the nutty, savoury character that defines this remarkable Jura style.
This bottle comes from Domaine de Sainte Marie, a Jura estate that specialises in Savagnin. Vin Jaune is made in a very particular way. After fermentation the wine is aged in barrel without topping up, allowing a thin layer of yeast to form on the surface. Over time this protects the wine while gradually shaping its distinctive flavour.
The process takes patience. By law Vin Jaune must spend at least six years and three months in barrel before release, during which time the wine slowly concentrates and develops its hallmark aromas.
Domaine de Sainte Marie Vin Jaune shows toasted walnut, almond, dried citrus peel and gentle spice. The palate is rich and layered, with vibrant acidity balancing the savoury flavours and carrying them into a long finish. The traditional ageing gives the wine its characteristic oxidative edge and remarkable longevity.
Vin Jaune is one of the Jura’s most distinctive wines and can age for decades. Once opened it also keeps unusually well, often remaining fresh for several days.
Food Pairing
Traditionally served with aged Comté or other hard cheeses, creamy mushroom sauces, roast chicken or smoked fish. For something less traditional, it is also strangely good with Cheesy Wotsits.

Don't be fooled by its size, good things come in small packages. Although Jura vineyards stretch over just 50 miles, they are no less rich or varied.
Nestled against the Jura Mountains are seven Appellations. Arbois (the oldest appellation in France), Côtes du Jura, L'Etoile, Château-Chalon, Macvin du Jura, Crémant du Jura and Marc du Jura. The grape varieties are: Chardonnay, Savagnin, Poulsard, Trousseau and Pinot Noir.
Small-berried and thick-skinned, Savagnin has been cultivated in France for at least 900 years. It is also known as Traminer, as well as ‘Heida’ in Switzerland, although the grape’s birthplace is unclear.
It is best known as the signature grape of Jura. It ripens late, though it can produces dry white wines with good acidity. In Jura, it typically has a citrus and floral character, though more tropical examples can be found.
Domaine de Sainte Marie is a family estate in the Jura near Arlay, with a vine-growing history stretching back more than two centuries.
Today Bertrand and Gaëtan de Sainte Marie focus on Savagnin, the region’s signature grape. Their wines show the Jura’s distinctive character: structured, savoury and shaped by limestone soils and a cool alpine-influenced climate.
