The Pascal family settled in Puligny in the early 20th century, gradually building vineyard holdings and moving fully into wine production when interest in Burgundy began to recover. By the 1970s the domaine had expanded to around 15 hectares across Meursault, Puligny, Volnay and Auxey-Duresses. Today the vineyards are looked after by Yann Pascal, with the wines made and sold by his wife, Alexandra.

This Auxey-Duresses Blanc is a good reminder of how well Chardonnay can work in the village. The style is crisp and clean, with oak used carefully to add shape rather than weight.

On the nose there are summer orchard fruits with a nutty, slightly mealy note. The palate has real substance, dense and concentrated, but driven by mineral freshness rather than richness. There’s grip here, and a long, insistent finish that keeps pulling you back for another taste. It’s a confident, well-made white Burgundy that shows Auxey-Duresses at its best.

Food Pairing

This works well with roast chicken, pork or veal, particularly where there’s a bit of richness in the cooking. It also suits mushroom dishes and firm white fish, where the wine’s grip and freshness can stand up to more savoury flavours.

The two major grapes are Pinot Noir and Chardonnay, though you can find small pockets of well-made Aligoté.

Yann Pascal, Domaine Joseph Pascal

The Domaine was founded in 1920 in Puligny-Montrachet. It comprises 14 hectares of vineyards across four communes of Cote de Beaune, Auxey Duresses, Meursault, Volnay and Puligny-Montrachet. This small family domaine embodies meticulous traditional winemaking with minimal use of oak.
