A fuller, more textured style of Cava made entirely from Garnacha. Although Blanc de Noir translates as “white from black”, the grapes are pressed without skin contact, giving a pale sparkling wine with extra depth and character.

The nose shows soft red fruit and floral notes, with hints of raspberry and rose. On the palate, the wine is creamy and rounded, with baked apple, toasted almond and gentle brioche notes balanced by fresh acidity.

This sits slightly away from the lighter, sharper style of Cava. There’s more texture here, making it particularly good at the table while still keeping the freshness you want from sparkling wine.

A good bottle for celebrations, but equally useful when you want sparkling wine with a bit more presence.

Food Pairing

Works well with Iberico ham, cheese boards, poultry and rice dishes. Also very good with tapas or simple salty snacks.

Aragón, Spain

The Aragón wine region is one of the largest in Spain, producing a wide range of wines, including red, white, rosé, and sparkling wines. Its climate is continental with hot summers and cold winters, while its diverse soils include limestone, clay, and slate. 

There are three sub-regions: Somontano, Campo de Borja, and Cariñena.

Bodegas San Valero

Jesús Prieto, Juan García and Javier Domeque are the custodians of Cava at Bodegas San Valero. Their Gran Ducay D. O. Cava was launched in 1984 with the Cava Particular following in 2014 (originally this Cava was made solely for the consumption of members of the winery, so expect something rather special).

Cava (Blend)

Cava was first produced in 1872 by Josep Raventos, inspired by Champagne. Cava is made by the Traditional (Champagne) Method and therefore has similarities in flavour and texture.

The traditional grapes are Macabeo, Parellada, and Xarel-lo; though Chardonnay, Malvasía, Garnacha, Trepat, Monastrell and Pinot Noir are also permitted.
