Florent Rouve makes a quietly impressive range of wines from his cellar in Davayé, right in the heart of Saint-Véran. His approach is consistent across the range: fermentation in barrel, a small proportion of new oak (around 10–25%), and time spent resting on fine lees before bottling. The result is Chardonnay with texture and depth, without losing its line.
“En Crêches” is one of the stonier sites in the appellation, on the eastern slopes of the Roche de Vergisson. It tends to give a denser, more structured style of Saint-Véran, with a clear sense of place.
In the glass, this shows ripe orchard fruit and citrus, with a gentle nutty note from the barrel work and a mineral backbone that keeps everything in check. The oak is present but well judged, adding shape rather than flavour.
Food Pairing
This works particularly well with roast chicken, or a slow-cooked creamy chicken, lemon and herb casserole, where the wine’s texture matches the dish and the acidity keeps it feeling balanced rather than heavy.

Chardonnay
One of the world’s most popular grapes, Chardonnay is made in a wide range of styles from lean, sparkling Blanc de Blancs to rich, creamy white wines aged in oak.
Depending on how ripe the grapes get, the flavour ranges from crisp, clean citrus and green apple, to ripe peaches and tropical fruit. Notable Chardonnays can be found in France, California, Australia, England, and beyond.
Burgundy (or Bourgogne in French) is small in size, the Côte d'Or has about 8000 hectares under vine, yet its influence is immense. It is home to some of the best known and most expensive wines in the world. Look in the right places and there is great quality and superb value to be found.
The two major grapes are Pinot Noir and Chardonnay, though you can find small pockets of well-made Aligoté.
This brilliant young wine-maker has made a name for himself in both his home region of the Jura and in the Mâconnais where he has expanded his holdings considerably by buying the famous Jean Rijckaert estate from the eponymous Belgian restaurateur.
Rouve’s oenological approach emphasizes freshness, integrity and balance and offers a superb alliance of tradition and a modern, minimalist style that respects the unique terroirs in which he works.
