Florent Rouve vinifies an exemplary range of Mâconnais wines in his cellar in Davayé in the heart of the Saint Véran appellation. All the wines are barrel-fermented in 10-25% new oak barrels and aged for 12-15 months on the fine lees before bottling.

"En Crêche" is an area of the Saint-Veran wine region that is renowned for its unique features. In this stony "cradle", shaped by the eastern slopes of the Roche de Vergisson, wine with impressive density are crafted.

It is an excellent partner to roast chicken or a slow-cooked creamy chicken, lemon and herb casserole.

Burgundy, France

Burgundy (or Bourgogne in French) is small in size, the Côte d'Or has about 8000 hectares under vine, yet its influence is immense. It is home to some of the best known and most expensive wines in the world. Look in the right places and there is great quality and superb value to be found.

The two major grapes are Pinot Noir and Chardonnay, though you can find small pockets of well-made Aligoté.

Chardonnay

One of the world’s most popular grapes, Chardonnay is made in a wide range of styles from lean, sparkling Blanc de Blancs to rich, creamy white wines aged in oak.

Depending on how ripe the grapes get, the flavour ranges from crisp, clean citrus and green apple, to ripe peaches and tropical fruit. Notable Chardonnays can be found in France, California, Australia, England, and beyond.

Florent Rouve

This brilliant young wine-maker has made a name for himself in both his home region of the Jura and in the Mâconnais where he has expanded his holdings considerably by buying the famous Jean Rijckaert estate from the eponymous Belgian restaurateur.

Rouve’s oenological approach emphasizes freshness, integrity and balance and offers a superb alliance of tradition and a modern, minimalist style that respects the unique terroirs in which he works.
