If you’re cooking with red meat, slow-cooked dishes, mushrooms, or hard cheeses, this is usually the safest place to start.

What counts as a full bodied red?

“Full bodied” is mostly about how a wine feels in the mouth. More weight, more texture, and usually more depth of flavour. That can come from grape variety, warmer climates, riper fruit, or winemaking choices that build structure.

You’ll often see fuller-bodied styles made from grapes like Syrah, Grenache, Malbec, Cabernet Sauvignon, Tempranillo and Nero d’Avola. They tend to show darker fruit, spice, and savoury notes, with tannin that gives the wine shape.

If you normally buy Côtes du Rhône, Rioja Reserva, Barossa Shiraz, or richer Tuscan reds, this category will feel familiar. If you’re not sure, start with something from the Rhône or Spain and work outwards.

Food Pairing

Steak, burgers, roast lamb, slow-cooked beef, venison, mushroom dishes, and aged hard cheeses.

These are also great for winter cooking: stews, casseroles, and anything with caramelised flavour from roasting or browning. If a dish is rich, a fuller-bodied red usually makes more sense than something light and fruity.
