Céline & Frédéric Gueguen practice low intervention techniques to get the most from their Chardonnay grapes. They use natural yeasts and the wine completes malolactic fermentation and spends 12 months on its fine lees, adding a weightiness to the palate.
It is well-balanced and slightly racy. There are notes of lemon, quince and white flowers. There is a steely minerality, as you;d expect from good Chablis, with a hint of almond.
The palate is fruity, well-balanced and silky. In the mouth this wine expresses notes of ripe peach, apricot and slight touches of quince, ripe pear a hint of lemon, and a touch of clementine. Good length.
Sushi, sashimi, scallop carpaccio or a seafood platter would all be excellent food pairings.
Proper orchard fruit Chablis, steely and mineral.
