Hattingley Valley has quickly established itself as one of the UK’s most successful wineries, winning over 100 medals, 13 trophies, and three Best in Class for its English sparkling wines. It is recognised for its innovative and dynamic approach to winemaking, with award-winning English sparkling wines enjoyed throughout the UK and exported internationally to 16 countries.

The Robinson family planted their first vineyard on their farmland in 2008. They had no idea where it would lead. Emma Rice, then head winemaker, took full advantage of Simon Robinson’s lack of industry knowledge (and large chequebook) to coax him into buying the best equipment, Hattingley now have one of the most advanced wineries in the world and Simon has a much smaller chequebook.

Rob MacCulloch MW, Hattingley Valley

Rob has over 20 years of experience. He learned his skills in both cool and warm climates, making wine from Margaret River in Australia to the Mosel Valley in Germany. At Hattingley Valley, he is responsible for leading the team of winemakers and overseeing the creation of their award-winning still and sparkling wines.

Favourite wine and food pairing?
Well, the honest answer is “it depends” – there are just so many variables, right? Whom you’re drinking with, what you’re eating, where you are etc etc. But I would say that I’ve always loved Chardonnay, so matching our Blanc de Blancs with a firm white fish like a monkfish in a simple sauce like a sorrel sauce would be perfect.

Why Wine?
Before wine, I’d never worked with anything that was so multi-faceted, and that immediately caught my interest. Once I started to read about all the complexities in growing and making wine, I never wanted to do anything else – it took a while to make that happen, but making the stuff in the bottle was always the goal.

Harvest is the pinnacle of the grapegrowing year at Hattingley Valley. The vineyard team decides when the grapes are perfectly ripe to pick and then gets to work. Each bunch is carefully picked by hand to avoid any damage to the grapes. The hours are long and days endless, but it brings everyone together and is just the start of the wine making journey. The grapes are rushed to the winery to be pressed as soon as possible. This quality juice is then fermented into a fairly neutral base wine using a special champagne yeast. A small proportion of Hattingley Valley wine is fermented in oak barrels with the remainder in stainless steel tanks.
