A delicious salmon pink still wine, it has aromas of summer fruits and citrus and on the palate a balanced acidity with a touch of strawberries, cream with a hint of peach.

After the grapes were crushed, they were left to macerate on their skins for 12 hours to extract the beautiful salmon pink colour, then pressed. The juice was then fermented and aged in stainless steel for 7 months

Pinot Noir

Pinot Noir is the holy grail grape for many winemakers, it is a difficult mistress, but when made well it shines.

Young Pinot Noir has delicious aromas of cherries, raspberries, and strawberries. With age it develops complexity and mystery. Older wines have the capacity to become a gamey style of wine, and the best examples show autumnal notes of truffles, mushrooms, and forest floor.

Olly Shaw, Calancombe Estate

Calancombe’s aim is to: "produce the finest quality sparkling and still white, red and rosé wines, from grapes grown exclusively on our Estate and produced in our purpose built winery."

Winemaker Olly Shaw previously worked in France and New Zealand where he acquired skills and knowledge about the art of viticulture.

Devon, England

Devon's vineyards are situatued in the valleys and lowlands of south and east Devon. Mostly close to the rivers Exe, Teign and Dart.

The growing season is long, with sun and heat starting earlier and lasting longer than in many other English counties. This gives the grapes more time to ripen and more time to hang.

Calancombe Estate

Blessed with a unique microclimate, south-facing slopes and free draining soil, the Calancombe Estate is ideally suited for wine production.

After taking advice from a leading viticulturist, planting of the first parcel of vines commenced in 2013. Total plantings now extend to 23 acres making the Estate the largest in South Devon that produces its own wines and one of the larger estates in the country.

    A very delicate Pinot noir rose with a fresh citrus background which is an excellent low strength wine 1st tried at Soir Cove Hotel along with the equally nice Bacchus
