White wines account for just 1% of the production of the Saint Chinian appellation, which makes this Petit Paradis as precious as it is rare. This is a complex, generous wine produced by vines that have been lovingly tended by both man and nature.
The wine is made from a blend of local varieties: Grenache blanc (50%), Marsanne (30%) and Vermentino (20%) - now officially named Rolle.
The Vermentino has spent 6 months in French oak. 15% of the Grenache blanc and 25% of the Marsanne are aged in new French oak barrels. The rest is aged in stainless-steel vats.
On the nose there is a complex bouquet of white fruit and quince jam. The palate is intense and soft with a long spicy finish.
Ideal served with monkfish tagine, fresh tuna steaks or chicken with cream sauce.
